Rosemary Roast Beef

1. Preheat oven: 450.

2. Chop vegetables: celery, carrots, onions, garlic, mushrooms.

3. Brown chuck roast on stove top. Salt & pepper.

4. Wrap roast, vegetables, and rosemary sprig in tin foil.

5. Place in shallow pan....I used my Giada lasagna pan..don't!
(The pan cracked  and now I need a new one..
I can see Giada's gleaming teeth laughing at me now!
I switched the roast to my foul proof metal roasting pan
..after the mini heart attack ..and mess on the kitchen floor)

6. Roast the roast for 3-4 hours.
(that's 6-8 episodes of the I Love Lucy marathon going on right now)

7. Save the drippings to make into a most excellent gravy.
